You pick three cards from your movement deck for that turn. Next turn you could used the exact same cards if you wanted to, like you said. The only time there is any restrictions on movement is if you do a difficult maneuver or a climb, or receive a jammed rudder as an example of damage.
If it helps you plan your movement turn your cards upside down so you can plan as your plane moves towards your table position. My friend had a real problem when his plane was facing him, he always did the opposite of what he wanted, which sometimes worked in has favor because it made no sense to me and I planned as if he were making a 'good' move and would go the wrong way.

Good idea, funnily enough the flying towards us did not give problems at all.
But with the wrong use of the cards we did experiences a number of near misses, my youngest is not a flyer ace..
In the end he was so full of it, that after victory he insisted he'd now try and shoot my plane down.
Nah, lets not do that...:shake:

And we did have to bend the rules a bit to avoid planes dropping off the table.

Next time we may try and make things a bit more complicated by using
some of the counters.
From what I've read in the rule book it will make things interesting, burning and smoking planes, and the extra problems they leave you with.

I now do regret I didn't buy more planes when they were still reasonably priced.
I wish ARES offered some boxes with a set of planes in them for a lower price.

It seems to me it could be even more fun if everybody had two planes.
That way you can still play if you've lost one.

If we realy get more skilled we may even attempt to try a scenario some day. But for now we are content with the dogfight.

For the future I do not see us attempt the 3D effect of diving and climbing.
Not only because it seems a bit complicated, but also because I fear for my precious models if the kids start fiddling with the stands.
